Can only the 48-tooth chainring be replaced?
Yes. On the GRX double crankset, the outer chainring can be replaced independently when worn, without changing the whole crankset.
Does this chainring work with an 11-speed drivetrain?
No. This model is optimised for GRX 12-speed drivetrains. For an 11-speed drivetrain, it is preferable to use chainrings specific to this generation.
